In the north, food has always been about making the most of what the land and sea provide.

Our menu is informal and generous, offering small tastings of our food culture – a mix of distinctive local ingredients, well‑known recipes, and a few unexpected flavours. Simple, honest food meant to be enjoyed.

From sea and coast​

With an abundance of cold, clear coastal waters, fish has always played a central role in Northern Norwegian cuisine.

In earlier times, many farms in Northern Norway had their own small, homemade smokehouse, where fish was preserved for the months ahead. Hot smoking is one of these old methods, adding flavour while helping the fish keep longer.

This tradition lives on in dishes like our salmon rillette made with hot‑smoked salmon, served with a traditional crisp Norwegian flatbread.

Along the coast, fish cakes have long been everyday food in Norway. Practical, comforting and familiar, they are a natural part of northern home cooking.

From inland and open landscapes

From inland and Sámi food traditions comes reindeer, a meat deeply connected to Norway. It is seasoned with juniper berries, a wild Nordic spice traditionally used to flavour and preserve meats. Served with lingonberries, it creates the classic balance of richness and acidity found in northern cooking.

Potatoes and root vegetables have always formed the backbone of everyday meals – reliable, nourishing and deeply grounding.

Gardens and farms that endure the north​

Northern gardens are shaped by a colder climates but bright summers with the Midnight sun. Rhubarb is one of the plants that thrives here, which is why it has been used in Northern Norwegian kitchens for generations. Its fresh acidity makes it a natural ending to a meal.

We also use traditional dairy like sour cream and brown cheese, along with herbs and flowers such as rosebay willowherb – a small details that reflect the landscape around us.

Our starter, salmon rillette is rooted in old coastal pre-servation traditions from Northern Norway, where smoking gave fish both flavour and longevity. Hot-smoked salmon is gently folded with sour cream, yoghurt, lemon and fresh herbs – soft and balanced with clear notes of sea and smoke. Served with traditional Norwegian flatbread – a timeless baked staple that has accompanied everyday meals for generations.

Local craft beer from Senja

Our beers from Senja Handbryggeri are locally produced on Senja, just 10 minutes from Norwegian Wild.

The brewery is run by two former teachers, Bjørn Stangnes and Rune Ludviksen, who started brewing beer as a passion project before founding the microbrewery in 2014.

Today, they produce handcrafted beers inspired by the dramatic mountains, fjords, weather, and stories of Senja. Each beer is named after local landmarks, mountains, or natural phenomena from the island, giving every bottle a true taste of Senja.

Segla – Kölsch Type

Segla is inspired by the magical nature of Senja and the popular mountain of the same name. A fresh, light, and easy-drinking beer, perfect for a summer day by the sea or after a hike in the mountains.

Their award-winning spirits are inspired by Arctic nature, Norse mythology, glacier water, local herbs and berries, and the Northern Lights. Our cocktails bring together Arctic craftsmanship, local storytelling, and flavors from Northern Norway.

We proudly serve a selection of alcohol-free beer, soft drinks, and sparkling beverages from Mack Brewery in Tromsø, founded in 1877 and known as the world’s northernmost brewery.For more than 140 years, Mack has been an important part of Northern Norwegian culture and is still family-owned today. Their products are inspired by Arctic nature, pure ingredients, and proud brewing traditions from the north.

We are also lucky enough to serve fresh mountain water directly from the tap, sourced from the untouched nature surrounding Ånderdalen National Park.
